  • 1 1/2 cups plain flour
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup brown sugar, loosely packed
  • 3 eggs
  • 1/2 teaspoon vanilla essence
  • 3/4 cup vegetable oil
  • 2 cups grated beetroot
  • 1/4 cup apple purée

  • 1 orange, zested
  • Icing
  • 5 tablespoons icing sugar
  • 1 orange, juiced and zested
  • 3/4 cup extra-light cream cheese
  • pulp from 2 passionfruit


Step 1 Preheat oven to 180ºC. Line a 23cm-round cake tin with baking paper. Set aside.

Step 2 Sift flour, baking powder, baking soda, cinnamon and salt into a bowl. Stir in sugar.

Step 3 In a separate bowl, beat eggs together with vanilla and oil. Pour into flour mixture and beat until smooth. Add beetroot, apple purée and orange zest. Beat again.

Step 4 Spoon into prepared tin. Bake for 35 minutes. Turn heat down to 170ºC and cook for 10 more minutes or until inserted skewer comes out clean. Cool cake completely before icing.

Step 5 Make icing: beat together icing sugar and orange juice. Add cream cheese and beat until smooth. Spread over cake. Decorate with orange zest and passionfruit pulp.
