Spicy Chicken and Chickpeas

Spicy Chicken and Chickpeas Recipe

Try out this simple and easy to cook HFG sausage casserole which needs little stir fry but loads of nutrition for all.


  • 500g lean sausages
  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 carrots, sliced
  • 1 red capsicum, chopped
  • 400g can crushed tomatoes
  • 400g can chilli beans or chilli baked beans
  • 2 tablespoons tomato sauce
  • 2 cups frozen green beans


Step 1  Prick and boil sausages for around 5 minutes, until cooked. Leave to cool for a few minutes and then slice into pieces around 1 1/2-2cm thick; dry-fry in a non-stick frying pan until browned on both sides. Set aside.

Step 2  Add onion and garlic to pan, cook on medium heat for a few minutes. Add carrots and capsicum and stir-fry for another 2 minutes. Add crushed tomatoes, chilli beans and tomato sauce. Simmer for around 10 minutes, or until carrots are soft.  Return sausages to pan, add green beans and heat for a further 5 minutes. Serve with rice or mashed potato.
