Orange-Vanilla Cake

Orange vanilla cakeIt requires you to have simple easily available ingrediants to bake orange vanilla cake. Just Preheat oven to 180ºC. Lightly grease a medium loaf tin. Then Sift flour, baking powder and Splenda into a bowl and also Add melted spread, eggs, mashed banana, vanilla essence and milk. After Mixing it  well add orange zest, stirring briefly and Pour into prepared tin and bake for 45 minutes. Lastly it requires you to make vanilla icing and for that you need a small bowl, mix icing sugar and vanilla extract with enough cold water to form a thin paste and drizzle over cooled cake and serve.

Ingredients:

  • 2 cups self-raising flour
  • 2 teaspoons baking powder
  • 1 cup Splenda (or sugar)
  • 5 tablespoons reduced-fat table spread, melted
  • 4 eggs, beaten
  • 1 small banana, mashed
  • 2 tablespoons vanilla essence
  • 100ml skim milk
  • 1 orange, zested
  • Vanilla icing
  • 2 tablespoons icing sugar
  • 1/2 teaspoon vanilla essence

Method:

Step 1 Preheat oven to 180ºC. Lightly grease a medium loaf tin.

Step 2 Sift flour, baking powder and Splenda into a bowl. Add melted spread, eggs, mashed banana, vanilla essence and milk. Mix well. Then add orange zest, stirring briefly.

Step 3 Pour into prepared tin and bake for 40–45 minutes, or until an inserted skewer comes out clean. Leave to cool.

Step 4 Make vanilla icing: in a small bowl, mix icing sugar and vanilla extract with enough cold water to form a thin paste. Drizzle over cooled cake and serve.
